๐ Dad's SOOTHING Bok Choy Soup (็ฝ่็ช่ๆฑค)!
Ingredients
- Bok choy1 lb
- Pork chop4 oz
- Chicken broth14 oz
- Ginger2 slices
- Oil1 tsp
- Salt1 tsp
- Chicken stock1 tsp
- Cornstarch1 tsp
- Oyster sauce1 tsp
Instructions
- Trim the fatty edges off the pork chops.
- Cut the pork across the muscle grain into a few pieces, then into thin slices about 2 mm thick.
- Mix the cornstarch, oyster sauce and water until smooth, add the pork and massage it for about 30 seconds.
- Wash the bok choy well: separate the stalks, rub the base of each stalk to remove dirt, rinse under running water. Optionally soak for 30 minutes.
- Cut the larger stalks in half lengthwise and separate them from the leaves; smaller stalks can be left whole.
- Cut a few thin slices of ginger if using.
- On high heat, bring the water, chicken broth, oil, salt and ginger to a boil in a pot, covered.
- Add the bok choy stems first, then the leaves.
- Cover and wait for the pot to return to a gentle boil.
- Add the pork slices a few at a time, separating them, and add chicken bouillon if using.
- Once the pot returns to a boil, the soup is ready, about 1 to 2 minutes.
- Serve the bok choy in the soup, or remove it and eat it separately; for big batches, remove it from the hot soup sooner so it does not lose colour and firmness.
