Ingredients

Instructions

  1. Rinse the dried seaweed, rinsing more if it is sandy, then soak it for about 10 minutes (longer is fine).
  2. Wash the dried shrimp twice, then soak them in a small bowl of hot water for 5 minutes. Save the soaking liquid.
  3. Crack the eggs into a bowl and set aside.
  4. Cut the napa cabbage into 1 to 2 inch pieces, keeping the stem pieces smaller than the leaves.
  5. Cut the lean pork into strips, slices or mince.
  6. Mix the pork with salt, cornstarch and water to make a marinade.
  7. Heat oil in a soup pot on high. Add the shrimp and cook for 50 to 60 seconds, until fragrant.
  8. Add the chicken broth, the saved shrimp soaking liquid and the water, then cover and bring to a boil.
  9. Remove the lid, add the napa cabbage, cover again and cook on high until boiling again, about 1.5 minutes.
  10. Remove the lid, drain the seaweed and add it to the soup along with the marinated pork, stirring as the pork goes in.
  11. Lower the heat to medium. Beat the eggs and slowly pour them in while stirring to form silky wisps, then return the heat to high.
  12. Season with salt first, then sesame oil, fish sauce and white pepper. Taste and adjust, then serve in a large bowl for everyone to share.
