Dad's Tasty Chinese BBQ Spare Ribs (燒排骨)!
Ingredientes
- Pork rib3 lb
- Garlic1 colher de sopa
- Sugar1 colher de sopa
- Salt2 colheres de chá
- White pepper1 colher de chá
- Ketchup2 colheres de sopa
- Vinho de Shaoxing2 colheres de sopa
- Five spice · powder½ colher de chá
- Food coloring¼ colher de chá
- Honey2 colheres de sopa
Modo de preparo
- Make cuts between the bones and along the thick side of the ribs. Dab both sides dry with paper towel.
- Rub garlic salt over all surfaces of the ribs, paying attention to the cuts.
- In a medium bowl, mix the sugar, salt, white pepper, ketchup, cooking wine, five-spice powder and red food coloring (optional). Spread the marinade thinly over both sides of the ribs in a lined tray, then wrap them.
- Refrigerate for 4 to 8 hours. Do not marinate longer, or the meat will turn tough.
- Make the glaze: use maltose or honey, or microwave 2 tbsp sugar with 2 tbsp water for 1 minute, stir, and microwave another minute, stirring in between. It is ready when the syrup coats a spoon; it thickens as it cools. Be careful, it is very hot.
- Take the ribs out and rest them for about 1 hour. Preheat the oven to 400°F (204°C).
- Line a baking pan with foil and set a baking tray on top. Bake the ribs uncovered for 30 to 35 minutes.
- Brush the ribs with the glaze and bake for 10 more minutes.
- Rest the ribs for 10 minutes before cutting so the juices stay in.
