Zubereitung
- Soak the dried shiitake mushrooms in warm water for 30 to 60 minutes before you start, and heat the water needed for the noodles.
- Cut the yellow chives into 1-inch lengths, the shiitake into thin strips, the king oyster mushroom into thin slices and then thin strips, and the carrot into thin slices and then thin strips. Mince the garlic.
- Bring enough water to a boil in a deep, wide wok to submerge the noodles, with the heat on high. Add the yee mein and cook about 2 minutes until soft and fully loosened. Drain in a colander.
- Shock the noodles in cold running water if you will not stir-fry right away. Pour out the water from the wok and dry it.
- Heat the dry wok on high for 15 to 30 seconds, add oil and heat for 30 to 40 seconds, then fry the garlic for about 10 seconds until fragrant.
- Add the shiitake and king oyster mushrooms and cook for 10 seconds, then add the carrot and cook for 40 to 50 seconds.
- Add boiling water and let it boil for about 1 minute.
- Turn off the heat briefly. Stir in 2 tsp vegetarian oyster sauce, 1 tsp light soy sauce, 1 tsp dark soy sauce, 1 tsp sugar and 0.5 tsp salt, then taste and adjust the seasoning while the sauce is still brothy.
- Add the noodles and mix constantly so they absorb the sauce.
- Keep cooking on high heat for about 2.5 to 3 minutes until no liquid pools at the bottom and the noodles look saucy.
- Lower the heat to medium, add 1 tsp sesame oil and 1 tsp oil, then turn off the heat and stir in the yellow chives. Taste, adjust and serve.
