Ingredients

Instructions

  1. Cut the red and green peppers into strips, then cut across them into dice. Roughly dice the green onion, and mince the garlic. Slice the red chili into thin rounds.
  2. Cut the pork chop into palm-sized pieces, then slice each piece horizontally into thin slices, cutting against the grain. Pound both sides lightly with the back of a knife.
  3. In a bowl, mix the cornstarch, baking soda, cooking wine, oyster sauce, light soy sauce and water. Add the sugar and salt and mix.
  4. Add the pork to the marinade and mix by hand for about 1 minute. Marinate for 30 to 60 minutes.
  5. Heat the corn oil in a pot over medium heat to 380°F/193.3°C.
  6. Beat the egg in a small bowl, then mix it into the marinated pork until well combined.
  7. Spread the 3 tbsp cornstarch on a large plate. Coat the pork pieces with cornstarch.
  8. Fry the pork in small batches, one piece at a time, until light golden brown, about 1 and a half minutes. Drain them with a strainer, letting the oil run back into the pot.
  9. Raise the heat to 450°F/232.2°C and fry the pork a second time for about 30 seconds, until golden brown and extra crispy.
  10. Set the oil aside. In a small bowl, mix the garlic salt, salt and white pepper.
  11. Heat a wok over medium heat and add about 1 tsp of the used oil. Stir-fry the garlic and red chili until fragrant.
  12. Add the bell peppers and stir-fry about 30 seconds over high heat.
  13. Add the green onion, then all the pork. Toss for about 30 seconds.
  14. Gradually add the seasoning mix, stirring to coat evenly. Cook 15 to 20 seconds, then turn off the heat.
  15. Keep mixing for 20 to 30 seconds until the seasoning coats the pork evenly. Plate and taste, adjusting the flavor as you like.
