Preparación
- Make the sauce: in a medium bowl, stir together the chili crisp, soy sauce and tahini. Set aside.
- Heat a large skillet over medium-high until hot. Add the sesame oil and heat for about 5 seconds. Add the pork and break it into crumbles with a spoon. Cook for 3–4 minutes, stirring once, until about half still pink.
- Add the sui mi ya cai, black bean sauce, shaoxing wine, soy sauce, five spice and garlic, and stir to coat. Cook for 1–2 minutes, stirring once, until the pork is cooked through and no longer pink. Remove from the heat and transfer to a bowl.
- Bring a medium pot of water to a boil over high heat. Add the bok choy and cook for about 1 minute, until wilted and tender. Lift it out with tongs and set on a plate.
- Cook the noodles in the same water following the package instructions. Drain them, reserving 3 tablespoons of the cooking water.
- Divide the sauce among 3 bowls and add 1 tablespoon of the noodle water to each. Divide the noodles among the bowls and toss to coat.
- Top each bowl evenly with the pork mixture, scallions and peanuts, then serve.
