Date Night Lemon Pappardelle with Shrimp
Ingredients
- Shrimp1 lb
- Butter4 tbsp
- Garlic · grated½ tsp
- White wine¼–½ cups
- Heavy cream½ cups
- Salt½ tsp
- Parmesan cheese · grated¼ cups
- Lemon1–2 tbsp
- Pappardelle8 oz
- Black pepper · grated
Instructions
- Cook the pasta in plenty of salted water following the package directions. Drain, keeping some of the cooking water. Toss the pasta with a little olive oil so it doesn't stick.
- Melt 2-3 tablespoons of butter over medium heat. Add the garlic and sauté for 1-2 minutes without browning it. Add the wine and let it bubble off for a few minutes. Add the cream and bring to a simmer. Stir in the lemon juice, salt and Parmesan if using, then lower the heat.
- Pat the shrimp dry. Heat 1 tablespoon of butter in a large skillet over medium heat. Add the shrimp, season with salt, and cook 1-2 minutes per side until pink. Cover with foil and set aside.
- Toss the pasta with the warm sauce and serve with the shrimp on top, with black pepper and lemon wedges.
