Ingredients

Instructions

  1. Set the oven rack to the middle and preheat the oven to 190°C (375°F). Soak a bamboo sushi mat in water.
  2. Line an 8-inch square baking pan with parchment paper.
  3. Blend the hanpen, 5 eggs, 2 tablespoons mirin, 2 tablespoons evaporated cane sugar and 1/8 teaspoon salt until smooth.
  4. Pour the mixture into the prepared pan and bake for 10 to 12 minutes, or until a toothpick inserted in the centre comes out clean.
  5. Let it cool for a minute or two, until it is easy to handle but still warm.
  6. Peel off the parchment and place the egg on the bumpy side of the damp mat. Roll it up slowly using the mat.
  7. Wrap rubber bands around the mat to compress the roll and hold its round shape.
  8. Wrap the whole roll in plastic wrap and refrigerate for at least 2 hours, or overnight.
  9. Unwrap and slice into 10 to 12 pieces.
