Dear Kev - Low Carb Corn Dog...Waffle Recipe?
Ingredients
- Beef5
- Almond flour¾ cups
- Cornmeal⅔ cups
- Salt
- Baking powder1 tsp
- Egg · beaten2
- Almond milk4 oz
- Honey1 tbsp
- Cheddar cheese · shredded⅓ cups
Instructions
- Heat the waffle iron.
- In a large bowl, stir the dry ingredients together with a fork.
- In a smaller bowl, beat the eggs with the almond milk and honey. Add this to the dry ingredients and fold until well mixed.
- If using, fold in the cheese and the diced franks.
- Once the iron is hot, grease it with nonstick spray and spread the batter evenly over it.
- Cook for 2 to 4 minutes; this batter cooks faster than most, and overcooking may burn it.
- Optional crispier finish: heat the oven to 400°F (200°C) — the text gives only °F, so use 400°F — place the cooked waffles on a baking tray and bake for 4 to 8 minutes, depending on how crisp you want the outside.
- Once the waffles are cool enough to touch, cut each into 6 pieces and skewer them with popsicle sticks.
