Ingredients

Instructions

  1. Whisk the sauce ingredients (chicken stock, light soy sauce, rice wine vinegar, Shaoxing wine, honey, sesame oil, garlic, ginger and corn flour) in a bowl until smooth. Set aside.
  2. In a large pan or wok over medium-high heat, add the peanut oil and stir-fry the chicken for 4-5 minutes, until cooked through. Remove the chicken and leave the fat in the pan.
  3. In the same pan over medium-high heat, stir-fry the onion and bell peppers for 3 minutes, until just softened. Add the carrots and broccoli and stir-fry for 4-5 minutes, until tender but still crisp.
  4. Return the chicken to the pan with the sauce and stir-fry for 2 minutes, until thickened and coated. Take off the heat.
  5. Cook the rice: put the rice and water in a saucepan over high heat. Once boiling, reduce to low, cover and cook for 12 minutes without disturbing. Remove from the heat, keep the lid on for 5 minutes, then fluff with a fork or spatula.
  6. Serve the stir-fry with the rice, garnished with sesame seeds, spring onion and chilli.
