Ingredients

Instructions

  1. Make the crust: whisk the flour, sugar, salt, curry powder, baking powder and Bijol together in a bowl.
  2. Work ¼ cup of the butter and ⅛ cup of the shortening into the flour mixture with your hands until it looks like pebbly sand. Keep the rest of the butter and shortening chilled.
  3. Beat the egg lightly. Set aside 1 tablespoon of the ice water and whisk it into the egg to make an egg wash. Stir 1 tablespoon of that egg wash into the remaining ice water and refrigerate it.
  4. Add the ice water mixture 1 tablespoon at a time, gently bringing the dough together until it forms a non-sticky ball. Do not add more liquid than needed.
  5. Wrap the dough and chill for 1 hour.
  6. Make the filling: toss the shredded chicken with the BBQ sauce and refrigerate.
  7. Roll the chilled dough to about ¼ inch thick on a floured surface. Sprinkle with the reserved butter and shortening, then fold it into a long rectangle about 12 to 15 inches long. Fold each side in to make a square about 4 to 6 inches, wrap, and refrigerate for 30 minutes.
  8. Meanwhile, preheat the oven to 400°F (200°C).
  9. Roll the dough out again and cut 3-inch rounds, re-rolling scraps, to make 16 to 18 patties.
  10. Roll each patty to about ⅛ inch thick. Put 1 to 2 tablespoons of chicken on one half, optionally add about 1 tablespoon of mozzarella, brush the edges with egg wash, fold over, and crimp with a fork to seal.
  11. Arrange the patties on a parchment-lined baking sheet, lightly brush with the remaining egg wash, and bake for 25 minutes.
  12. Let cool for 10 minutes before serving.
