- Whole chicken1
- Olive oil½ cups
- Onion · sliced4
- Garlic · peeled5–6
- Tomato · crushed15 oz
- Salt
- Black pepper
- Chili flake · crushed flakes
- Oregano · dried1 tsp
Instructions
- Preheat the oven to 190°C/375°F.
- Soak the okra in cold water with about half a cup of vinegar for 30 minutes, then pat dry and snip off the tops. If using frozen okra, rinse under cool water, thaw and pat dry.
- Pan-fry the okra in the olive oil for a few minutes until some pieces turn golden, without cooking them through. Transfer to a large baking pan.
- Brown the chicken for 3-4 minutes per side and add it to the pan, in the centre or around the okra.
- Cook the sliced onions in the pan until slightly softened, add the garlic for the last few seconds until warmed through. Add the crushed tomatoes and bring to a boil. Rinse the tomato can with a cup of water, add it to the sauce, and place the onions in the pan with the okra and chicken.
- Season with salt, pepper and crushed red pepper flakes, then toss everything to coat well.
- Roast on the centre rack for 1 hour 15 minutes. Finish with the dried oregano or chopped parsley.
