Ingredients
- Extra virgin olive oil2 tbsp
- Onion1
- Garlic4 cloves
- Carrot1
- Paprika · smoked½ tsp
- Rosemary · dried½ tsp
- Tomato2
- Lima bean1 can
- Vegetable broth3 cups
- Saffron¼ tsp
- Rice1 cup
- Pea · frozen⅓ cups
- Salt
- Black pepper
Instructions
- Heat a large frying pan over medium heat and add the olive oil.
- Meanwhile, finely chop the onion, roughly chop the garlic and finely chop the carrot.
- Add the chopped vegetables to the hot pan and stir constantly. After 3 to 4 minutes, when they are lightly softened, stir in the paprika and rosemary briefly. Add the grated tomato, season with sea salt and black pepper, stir and let simmer.
- While the tomato simmers, drain the butter beans into a colander and rinse them under water.
- After 3 to 4 minutes, when the grated tomato has thickened slightly, add the drained butter beans, vegetable broth and saffron. Raise the heat to high and stir gently.
- Once boiling, add the rice and stir once so it is evenly spread. Cover the pan and lower the heat to low-medium.
- After 15 minutes, add the frozen peas, spaced evenly over the surface. Cover again and simmer for another 3 minutes, or until the rice is cooked. Remove from the heat.
- Let the rice stand covered for a couple of minutes, then fluff gently with a fork. Serve straight from the pan or transfer to serving dishes.
