Instructions
- Preheat the oven to 400°F (200°C).
- Brush both sides of the zucchini slices with olive oil, season lightly with salt and pepper, and bake them for 10 minutes.
- Make the filling: warm the garlic in olive oil for a few seconds, then cook the spinach, stirring often, until wilted.
- Season with salt and pepper, take off the heat, and stir in the dill.
- Add the cream cheese and stir until it melts into the spinach, then crumble in the feta and mix. Adjust the seasoning to taste.
- Make the sauce: cook the onion in olive oil over medium heat until soft and golden, about 8 minutes. Add the garlic for a few seconds, then the tomatoes, salt, pepper and sugar.
- Bring to a boil, reduce to medium and cook until thickened, about 10 minutes. Adjust the seasoning, take off the heat and stir in the oregano. Set aside.
- Spread a tablespoon of filling on each zucchini slice and roll up.
- Spread 2-3 cups of the sauce in a 9 by 13-inch baking pan. Place the rolls on top, spoon more sauce over them and sprinkle with mozzarella.
- Bake on the center rack for 20-25 minutes, turning on the broiler for the last 4-5 minutes until the cheese is bubbly and browned.
- Let the rolls rest at room temperature for 15-20 minutes before serving so they set.
