- Beef stock1 ½ cups
- Cornstarch1 tbsp
- Blue cheese¼ cups

- Olive oil2 tbsp
- Thymea few sprigs
- Chicken stock½ cups
- Asparagus · peeled trimmed1 bunch
Instructions
- Preheat the oven to 450°F (232°C).
- Season the steaks with salt. If time allows, refrigerate them for up to 24 hours. Add black pepper just before cooking.
- Sear the steaks in a frying pan on both sides until a crust forms, then finish cooking them in the oven to the desired doneness. Rest for 5 to 10 minutes before slicing.
- For the sauce, sauté the shallot, garlic and sage in butter in a reduction pan.
- Add the Marsala, balsamic vinegar and beef stock and simmer until slightly reduced.
- Stir in the blue cheese until melted. Add the cornstarch mixture only if needed. Strain for a smoother sauce if you like.
- Take the pan off the heat and stir in the remaining butter.
- Peel the potatoes and slice them into 1-inch rounds, optionally using a cookie cutter for even shapes. Keep them in water until ready to cook.
- Dry the potato rounds thoroughly and sear them in a hot pan with olive oil until golden on both sides.
- Add the garlic, thyme and chicken stock. Cover and cook in the oven until tender.
- Boil the asparagus in salted water until tender to your liking, then transfer immediately to ice water.
- Reheat the asparagus in a pan with butter before serving.
- Slice the steak and serve on plates with the potatoes and asparagus, spooning the blue cheese sauce over the steak or on the side.
