🐟 DELICIOUS whole grilled fish, using my Egyptian mother in law's recipe
Ingredients
- Fish1 ½–2 ½ kg
- Garlic8 cloves
- Lemon6 tbsp + 1
- Oil2 tbsp
- Vinegar½ tbsp
- Salt2 tsp
- Cumin1 ½ tsp
- Black pepper½ tsp
- Coriander seed · ground½ tsp
- Chili powder¼ tsp
- Chili pepper2
- Cilantro50 g
- Carrot1
- Onion1
- Tomato1
Instructions
- Deseed the green chilli and cut it into a few pieces. Remove the tough stems from the coriander.
- Blend all the marinade ingredients into a slightly chunky paste.
- Place the fish on an oven tray and spread a few tablespoons of marinade over the insides. For a whole fish, cut slits in the sides and fill them with marinade. Leave to marinate for 15 minutes.
- Slice the tomato and onion very thinly (about 1 mm), finely grate the carrot, and cut the chilli into thin rounds.
- Mix the tomato, onion, carrot and chilli in a bowl with a few tablespoons of marinade until well combined.
- Spread the vegetable topping in an even layer over the fish, including inside the slits.
- Preheat the oven grill (broiler) to high. Place the tray under it and cook until the flesh is tender and cooked through; about 16 minutes for medium fish.
