Deliciously Soft Cream Cheese Kolaches: Easy Recipe Guide
Ingredients
- Milk½ cups
- Sugar · for garnish1 cup
- Salt1 tsp
- Yeast1 tsp
- Butter · softened¼ cups
- Flour3 cups
- Cream cheese · softened8 oz
- Vanilla½ tsp
- Egg · beaten2
- Lemon · juiced2 tsp + 1
- Blackberry2 cups
- Sliced mixed berry · for garnish
Instructions
- In a stand mixer with a dough hook, combine the milk, water, sugar, salt, yeast, butter and flour. Mix 6–8 minutes until a smooth dough forms. If it is still too sticky after 8 minutes, add 4 more tablespoons of flour.
- Shape the dough into a ball, cover, and rest it on the counter for 30 minutes.
- Divide the dough in half and cover one half. Roll the other half to about 1 inch thick and cut 2½-inch rounds. Place them on a parchment-lined baking sheet and cover. Repeat with the remaining dough.
- Let the rounds rest 45 minutes until soft and puffy.
- Meanwhile, mix the cream cheese, sugar, vanilla, egg yolk and lemon zest for the filling. Refrigerate until needed.
- Make the compote: in a pot over low heat, combine the blackberries, sugar, lemon zest and lemon juice. Stir gently until the berries release their juice, then simmer on low for 10 minutes until thickened.
- Preheat the oven to 375°F (190°C).
- Brush the puffy rounds with beaten egg. Press a round dip into the centre of each, spoon in about 2 tablespoons of filling, and top with compote.
- Bake 18–20 minutes until golden brown. Garnish with powdered sugar, lemon zest and fresh berries if using.
