Ingredients

Instructions

  1. Heat 2 tbsp oil in a pan, then add 1 tsp cumin and a pinch of hing.
  2. Add the 2 chillies and 1 inch of grated ginger and sauté well.
  3. Add the grated carrot, 5 tbsp cauliflower, 4 tbsp peas and 5 finely chopped beans and sauté well.
  4. Mash the vegetables and cook until they are evenly cooked.
  5. Add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala, ½ tsp aamchur, ½ tsp kala namak and 1 tsp salt. Sauté on low heat until the spices smell aromatic.
  6. Add the 3 mashed boiled potatoes, 1 cup grated paneer, 2 tbsp chopped coriander and 2 tbsp crushed kasuri methi. Mix well so the spices are evenly combined, then set aside.
  7. Take a ball-sized piece of dough and roll it to about 4 inches in diameter.
  8. Place a ball-sized portion of the filling in the centre.
  9. Gather the edges and pleat them toward the centre, then join the pleats and pinch off the excess dough to seal tightly.
  10. Sprinkle with wheat flour and roll out slightly thick.
  11. Cook the paratha on a hot tawa for about 1 minute.
  12. Flip when the base is partly cooked. Brush with oil or ghee and press lightly. Flip once or twice more until both sides are cooked well.
  13. Serve hot.
