- Shred the daikon and carrot into a bowl and set aside.

- In a heated non-stick pan over low-medium heat, cook the shredded daikon and carrot until the daikon is translucent and all the water has evaporated.
- Lower the heat, add the batter and stir constantly until thick, making sure all the daikon is coated. Season with salt and pepper.
- Spread the mixture into a 9×5 non-stick loaf pan, covering with foil if needed. Steam on the inner rack over high heat for about 30 minutes.
- Cool completely, or refrigerate overnight, before slicing. It can be served as is.
- For the stir-fry: loosen the cake with a knife, turn it onto a board and cut into bite-sized cubes.
- Pan-fry the cubes in oil until golden on all sides, then set aside.
- In the same pan with a little more oil, fry the garlic and preserved radish until fragrant. Add chilli sauce if using.
- Return the cubes to the pan, season with soy sauce, add the vegetables and toss until slightly tender.
