DIM SUM - Pork Dumplings Recipe (翡翠白菜饺子)
Ingredients
- Flour600 g
- Salt⅔ tsp
- Spinach150 g
- Ground pork500 g
- Soy sauce1 ½ tbsp
- Oyster sauce1 tbsp
- Five spice · powder1 tsp
- Shaoxing wine1 tbsp
- Sesame oil1 tbsp
- Garlic · diced2 cloves
- Ginger · diced½ inches
- Peppercorn1 tsp
- Scallion · diced½ cups
- Cabbage350 g
Instructions
- Make the white dough: dissolve 1/3 tsp salt in 150 g room-temperature water, mix into 300 g flour to form a rough dough, cover with a damp towel and rest 15 minutes.
- Make the green dough: blanch 150 g spinach for about 10 seconds, rinse in cold water (it should weigh about 160-170 g), season with 1/3 tsp salt, blend to a puree, and knead with 300 g flour. Cover with a slightly damp towel and rest 15 minutes.
- Knead the white dough until smooth, roll into a log. Do the same with the green dough. Cover both and rest 40 minutes.
- Finely dice the sour cabbage and 1/2 cup scallion.
- Blend 2 cloves garlic, 1/2 inch ginger, 1 tsp Sichuan peppercorns and 5 tbsp water into a puree, then sieve it to remove stubborn bits.
- In a large bowl, mix 500 g ground pork with 1.5 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp Chinese cooking wine, 1 tsp five-spice powder and 1 tbsp sesame oil. Pour in the aromatic water and stir in one direction for 5 minutes. Then mix in the sour cabbage and scallion.
- Taste the filling by cooking a teaspoon in the microwave and adjust if needed, since sour cabbage salt levels vary.
- Roll the white dough into a 20-inch log. Roll the green dough into a 20 x 4 inch sheet, thinner along its length. Lightly dampen the sheet, wrap it around the white log, then roll thinner and longer.
- Divide into 50 even pieces, dust lightly with flour and cover with a damp towel. Roll each into a round wrapper about 3 inches across.
- Place filling in each wrapper, fold in half, and pinch the edge closed.
- Bring water to a boil, swirl it to form a cyclone, and add the dumplings. Keep the heat at medium and swirl gently.
- When it returns to a simmer, add 1/2 cup cold water. When it simmers again, add another 1/2 cup cold water. Turn off the heat when it simmers again and all dumplings float; remove and serve with dipping sauce.
