Instructions
- Place the chicken in a bowl, sprinkle with the cornflour and toss with a fork or your hands until coated.
- Break the egg into the bowl and mix thoroughly with a fork. Discard any egg that pools at the bottom.
- Sprinkle on the flour, then the salt, pepper, garlic salt and paprika. Mix with your hands until the chicken is well coated; it will be sticky.
- Heat the oil in a wok or large frying pan until hot.
- Add the chicken and cook on high heat for 6 to 7 minutes, turning two or three times, until well browned. Cook in two batches if the pan is crowded.
- Once browned, add the plum slices, peppers and garlic. Cook for 2 minutes, stirring often, until the plum starts to soften.
- Add all the sauce ingredients (tomato paste, rice vinegar, brown sugar, sweet chilli sauce, dark soy sauce, chilli flakes and pineapple juice) and stir. Bubble on high heat for 2 to 3 minutes until the sauce reduces by about a third.
- Turn off the heat, divide between four bowls, and serve with rice.
