Dirty Bird Chicken Bites
Ingredients
- Chicken breast · boneless skinless4
- Pickle1 jar
- Bacon · sliced1 lb
- Hot sauce1 bottle
- Killer Hogs Hot Rub¼ cups
- Soy sauce¼ cups
- Honey¼ cups
- Brown sugar3 tbsp
- Sriracha sauce2 tbsp
- Pineapple juice1 tbsp
Instructions
- Put the chicken chunks in a bowl, add the hot sauce and toss so every piece is coated. Refrigerate for at least 1 hour, or up to overnight.
- Lay half a strip of bacon on the counter, place a chicken chunk on it, add one slice of hot dill pickle, and wrap the bacon around the chicken, securing it with a toothpick. Repeat for all pieces.
- Season the bacon-wrapped bites with Killer Hogs Hot Rub.
- Set up a charcoal grill for two-zone cooking, with one hot side and one cool side.
- Place the bites on the cool side, away from direct heat, and cook for 35-45 minutes, moving them as needed to prevent burning, until the internal temperature reaches 165°F.
- For the dipping sauce, combine the soy sauce, honey, brown sugar, Sriracha and pineapple juice in a heatproof bowl and stir. Microwave at 100% power for 2-3 minutes, or until the sugar dissolves. Stir and let it cool before serving; it will thicken as it stands.
