Diwali Snacks Recipes - Sweet Murukku
Ingredients
- Rice flour1 ½ cups
- Urad dal4 tbsp
- Hot oil1 tbsp
- Sesame seed¾ tsp
- Carom seed¾ tsp
- Salt½ tsp
- Chili powder½ tsp
- Asafoetida0.13 tsp
- Oil for deep frying2 ½–3 cups
- Chickpea flour1 cup
- Butter softened or hot oil1 tbsp
- Water as needed to make dough
- Jaggery · grated1 ½ cups
- Cardamom · powder½ tsp
- Ginger powder · dried¼ tsp
- Mace · powder
Instructions
- Dry roast 4 tablespoons of urad dal on medium heat until lightly golden, then cool and grind to a fine powder, sieving if needed. Use only 4 tablespoons of this flour. (Alternatively, blend 3 tablespoons roasted gram into powder and use 3 tablespoons.)
- Grease the murukku mould and a star-shaped plate with a little oil.
- In a bowl, mix 1 cup rice flour, the 4 tablespoons urad dal flour, ¾ teaspoon ajwain, salt and ¾ teaspoon sesame seeds.
- Heat 1 tablespoon oil in a small pan and pour it over the flour, then mix well.
- Add water little by little until you have a smooth dough. Mix without kneading; the dough should be non-sticky and free of crumbs. Use it immediately, without resting.
- Heat oil in a kadai on medium heat.
- Fill the mould with dough and press spirals onto a cloth, butter paper, foil or a flat holed ladle.
- Set the flame to medium high. Test the oil by dropping in a small piece of dough: it should rise steadily without browning, not sink.
- Slide the murukku into the hot oil and fry until golden and crisp on medium high heat.
- Drain on kitchen tissue, then cool completely and store in an airtight jar.
