- Sugar3 tsp
- Habanero powder2 tsp
- Chicken breast · boneless skinless1 lb
- Egg · beaten3
- Breadcrumb1 ½ cups
- Takis-style powder · plus more for dusting1 tbsp
- Flour½ cups
- Cooking spray

Instructions
- Make the powder: whisk all the powder ingredients together in a bowl until evenly mixed. Taste a small pinch and adjust the spice, salt or tanginess to your liking.
- Store the powder in an airtight jar in a cool, dry place for up to 3 months.
- Blend the chicken, 1 of the eggs, ½ cup of the breadcrumbs and 1 tablespoon of the powder for 30–60 seconds, scraping down the sides as needed, until smooth and paste-like.
- Pipe the mixture into fry-sized strips about 4–5 inches long onto a parchment-lined baking sheet.
- Freeze the strips 25–30 minutes until firm.
- Set up three shallow bowls: flour, the remaining 2 eggs and the remaining 1 cup of breadcrumbs. Dredge each chilled strip in flour, dip in egg, then coat thoroughly in breadcrumbs.
- Lightly coat both sides of each strip with cooking spray.
- Preheat the air fryer to 400°F (200°C). Cook the chicken fries about 12 minutes, flipping halfway, until golden and a thermometer inserted into each registers 165°F.
- Toss the hot chicken fries with an additional 1–2 tablespoons of the powder. Serve hot with dipping sauce.
