Doritos BBQ Onion Rings
Ingredients
- Tortilla chips1 packet
- Vegetable oil · for frying2 cups
- Onion1
- Egg1
- Buttermilk¼ cups
- Flour½ cups
- Parsley · finely chopped
- Dipping sauce · of choice
Instructions
- Open a small hole in the top seam of the Doritos packet. Using a rolling pin, crush the chips into small pieces, without making them too fine.
- Heat the vegetable oil in a medium pot or pan over medium heat. The oil is ready when small bubbles form around the back of a wooden spoon placed in it.
- On a clean board, peel the onion and slice it into 3 cm thick rings. Separate the rings and set them aside.
- In a medium bowl, whisk the egg and buttermilk until smooth. If you have no buttermilk, mix ¼ tsp lemon juice with ¼ cup milk.
- Dip the onion rings in flour, then in the egg mixture, and repeat once more. Put the double-coated rings in the crushed chips bag, shake briefly, then remove them and gently lower into the hot oil. Freezing the coated rings for 20–30 minutes before frying helps the coating stay on.
- Fry for 3–5 minutes, in batches so the pot is not overcrowded, until golden brown and crispy. Drain on a paper towel-lined plate.
- Serve on a platter with the chopped parsley and your favourite dipping sauce.
