Ingredients

Instructions

  1. In a small saucepan over medium heat, combine the diced dragon fruit, sugar and lemon juice. Stir until the sugar dissolves, then simmer on low for 10 to 15 minutes, stirring now and then, until thick and jammy.
  2. Blend the compote until smooth and let it cool.
  3. Grease a 9x9-inch baking pan with cooking spray.
  4. In a stand mixer bowl, stir the compote with 1/2 cup cold water. Sprinkle the gelatin over it and let it bloom for 5 minutes.
  5. In a medium saucepan over medium-high heat, combine the 1.5 cups sugar, the corn syrup and the remaining 1/2 cup water. Stir until the sugar dissolves, then boil, swirling occasionally, until it reaches exactly 240°F (115°C), about 10 to 12 minutes. Remove from the heat right away.
  6. On low speed, slowly pour the hot syrup into the gelatin mixture. Then raise the speed to high and whip until stiff and light pink, 7 to 10 minutes, until stiff peaks form when the whisk is lifted.
  7. Quickly pour the mixture into the prepared pan and spread it evenly with a spatula.
  8. Let it sit at room temperature for at least 4 hours until firm.
  9. Dust a work surface with confectioners' sugar. Loosen the edges of the marshmallow with a butter knife, turn it out onto the surface, and cut into 12 squares with a sharp knife, spraying the knife with cooking spray if it sticks.
  10. Toss each square in confectioners' sugar to coat all sides.
