Ingredients

Instructions

  1. Over medium heat in a small saucepan, combine the diced dragon fruit, 1 tablespoon sugar and the lemon juice; stir until the sugar dissolves.
  2. Once boiling, lower the heat to low and simmer 10-15 minutes, stirring now and then, until thick and jammy.
  3. Blend the compote until smooth, then let it cool.
  4. Grease a 9x9-inch baking pan with cooking spray.
  5. In a stand mixer bowl, stir the compote with 1/2 cup cold water. Sprinkle the gelatin over it and let it bloom 5 minutes until dissolved.
  6. In a medium saucepan over medium-high heat, combine 1.5 cups sugar, the corn syrup and the remaining 1/2 cup water; stir until the sugar dissolves.
  7. Bring to a boil, swirling occasionally, until it reaches exactly 240°F (115°C) on a candy thermometer, about 10-12 minutes. Remove from heat immediately.
  8. With the mixer on low, slowly pour the hot syrup into the gelatin mixture. Then whip on high 7-10 minutes until stiff and light pink, with stiff peaks when the whisk is lifted.
  9. Quickly pour into the prepared pan and spread evenly.
  10. Let stand at room temperature at least 4 hours until firm.
  11. Dust a work surface with confectioners' sugar. Loosen the edges with a butter knife, turn the marshmallow out, and cut into 12 squares with a sharp knife (spray the knife if it sticks).
  12. Toss each square in confectioners' sugar on all sides before serving.
