Ingredients

Instructions

  1. Remove the skin and seeds from the bottle gourd, shred 5 cups of it, then squeeze out all the water.
  2. Heat a pressure cooker, add the ghee and let it melt. Add the cashews and raisins (if using) and sauté them.
  3. Add the shredded gourd, stir to coat it in the ghee and sauté for about 4 minutes.
  4. Add the milk and green food colouring (if using), stir briefly, cover and cook until you hear 3 to 4 whistles.
  5. Let the cooker cool before opening. Over medium-low heat, stir in the dry milk powder and pistachio powder until well mixed.
  6. Once all the liquid has evaporated, add the sugar and keep stirring until it forms a bubbling syrup.
  7. Cook for 5 to 6 minutes more, until the mixture thickens and the ghee separates. Turn off the heat.
  8. Stir in the cardamom powder and let the mixture cool; it will thicken further as it cools. Serve warm, plain or with vanilla ice cream.
