Easiest Cinnamon Swirl Raisin Bread Recipe
Ingredients
- Milk½ cups
- Butter3 tbsp
- Raisin½ cups
- Egg1
- Flour3 ¾ cups
- Yeast1 tbsp
- Salt1 ½ tsp
- Sugar½ cups
- Cinnamon1 tbsp
Instructions
- Butter a 9x5-inch (23 x 12.5 cm) loaf pan and line it with parchment. Set aside.
- Heat the water, milk, butter and raisins in a small pan over medium heat, or in a microwave-safe bowl in the microwave, until the butter melts and the liquid starts to simmer. Cover and let cool to lukewarm, about 20 minutes, so the raisins plump up.
- Mix the flour, yeast and salt in a stand mixer bowl fitted with a dough hook.
- Whisk the egg into the cooled liquid, add it to the dry ingredients and mix on medium-low speed for about 8 minutes.
- Shape the dough into a smooth ball, place it in an oiled bowl and turn to coat. Cover and let rise in a warm place for 60 to 90 minutes, until doubled.
- Roll the dough on a lightly floured surface into a 9x18-inch (23 x 46 cm) rectangle.
- Mix the sugar and cinnamon and sprinkle evenly over the dough.
- Roll up the dough from a long side, place it seam side down in the prepared pan, cover and let rise in a warm place until doubled, 45 to 60 minutes.
- Towards the end of this rise, preheat the oven to 400°F (200°C).
- Brush the loaf gently with egg wash and bake for 35 to 40 minutes, until golden brown.
- Cool in the pan for 10 minutes, then move to a wire rack to cool completely before slicing.
