- Egg3
- Lemon
- Sugar
- Salt½ tsp
- Spinach · roughly chopped1 lb
- Scallion · finely sliced6
- Dill · dried3 tsp
- Ricotta cheese15 oz
- Feta cheese1 lb
- Black pepperto taste
Instructions
- Combine the flour, sugar and salt in a bowl and whisk.
- In a large bowl, whisk the olive oil, yogurt, egg and lemon juice until smooth.
- Gradually whisk the flour mixture into the wet ingredients. When too thick to whisk, knead by hand until a dough forms.
- Cover and rest the dough at room temperature for 30 minutes.
- In a mixer with the paddle attachment, beat the feta, ricotta, eggs, oil, salt, pepper and dill until combined.
- Beat in the scallions.
- With the mixer on low, add the chopped spinach a handful at a time until fully incorporated. Stir with a spatula and set aside.
- Preheat the oven to 200°C (400°F).
- Lightly oil the work surface. Divide the dough into two equal portions, then cut each into 8 pieces.
- Roll each piece into a ball, then press or roll gently into a 5-inch (about 13 cm) round, without adding flour.
- Place a tablespoon of filling on each round, add extra crumbled feta if you like, and fold over the filling.
- Press the edges together to seal, then crimp them with a fork.
- Arrange 8 pies per baking tray. Brush the tops with the egg wash.
- Bake for about 30 minutes until golden, swapping the trays' positions halfway through.
- Serve warm.
