Instructions

  1. Preheat a papad jali over medium-high heat. Brush the tomatoes with mustard oil and roast them over direct flame until fully charred and soft. Put them in a covered bowl and let them rest for a couple of minutes.
  2. Heat a pan over high heat, then dry roast the green chillies, garlic and coriander stems for 4-5 minutes until slightly charred. Let them cool in a bowl, cut off the chilli tops, then grind them with the very little water into a thick, coarse paste.
  3. Peel the tomatoes and chop them roughly, mincing with a knife without mashing them completely.
  4. Heat 2 tbsp mustard oil in a kadhai over high heat until it starts smoking, then turn off or lower the heat and let it cool slightly.
  5. Add cumin seeds, mustard seeds, curry leaves, the paste and the chopped onions. Stir and cook over high heat until the onions soften.
  6. Lower the heat, add the turmeric and Kashmiri red chilli powder, stir immediately, then add the tomatoes with salt, black salt and sugar. Stir well and cook for 2-3 minutes.
  7. Taste and adjust the salt if needed, then stir in garam masala and fresh coriander. Serve hot.
