Easy 1-Layer Sprinkle Cake
Ingredients
- Flour1
- Baking powder1 tsp
- Baking soda¼ tsp
- Salt½ tsp
- Butter · softened6 tbsp + ¾ cups
- Sugar3 ¾ cups
- Egg2
- Sour cream⅓ cups
- Vanilla2 tsp
- Milk⅓ cups
- Sprinkles½ cups
- Heavy cream3 tbsp
- Sprinkles for garnish
Instructions
- Preheat the oven to 350°F (177°C). Grease a 9×2-inch round cake pan, line the base with a parchment round and grease the parchment.
- Whisk the cake flour, baking powder, baking soda and salt together. Set aside.
- Beat the butter on high speed until smooth and creamy, about 1 minute. Add the sugar and beat on high speed for about 2 minutes until creamed.
- On high speed, beat in the egg whites until combined, then beat in the sour cream and vanilla. Scrape down the bowl as needed.
- Add the dry ingredients to the wet ingredients. On low speed, slowly pour in the milk and beat just until combined, without overmixing. Whisk by hand if needed to remove lumps; the batter will be slightly thick.
- Gently fold in the sprinkles.
- Pour the batter evenly into the prepared pan.
- Bake for 27 to 31 minutes, tenting with foil after about 18 minutes, until a toothpick inserted into the centre comes out clean.
- Cool the cake completely in the pan on a wire rack before frosting.
- Beat the butter on medium speed until creamy, about 1 minute. Add the confectioners' sugar, heavy cream and vanilla. Beat on low for 30 seconds, then on medium-high for 2 minutes. If too thin, add up to 1/4 cup (30g) more confectioners' sugar; if too thick, add a splash of cream. Add a small pinch of salt if too sweet.
- Spread the frosting over the top of the cake and finish with sprinkles if you like.
