Instructions

  1. Thaw the puff pastry overnight in the refrigerator, or at room temperature for about 1 hour if needed the same day. Chill it in the fridge for about 30 minutes before using.
  2. Preheat the oven to 400°F.
  3. On parchment paper or a silicone mat, unwrap the first sheet of pastry, roll it out gently, and cut a circle using an 8 to 10-inch disk as a guide. Save the scraps.
  4. Spread a generous layer of preserves evenly to the edges. Repeat with the second sheet, then top with the third sheet without adding jam on top.
  5. Slide the parchment onto a large baking sheet. Place a 2 to 3-inch round cutter in the center and cut 16 equal wedges from its edge outward.
  6. Take two wedges, twist them away from each other 4 to 6 times, then pinch the bottoms together. Do this for all wedges to make 8 twisted pairs.
  7. Beat the egg with a little water and brush the pastry generously with it.
  8. Bake at 400°F for 35 to 40 minutes, covering with foil after 10 to 15 minutes to prevent over-browning. It is done when the dough looks fluffy and golden, not wet or doughy.
  9. Cool on the pan for about 20 minutes, then dust with confectioners' sugar.
