1. Preheat the oven to 170°C (340°F).
2. Beat the softened butter, sugar and oil until light and fluffy.
3. Add the lemon zest, lemon essence and almond extract and mix.
4. Add the eggs one at a time, mixing after each and scraping the sides and bottom of the bowl.
5. Add the flour, baking powder and salt in two parts: beat in half, then the rest, mixing just to combine.
6. Add the 7UP and beat until combined, without overmixing. Scrape the sides and bottom.
7. Grease and flour a bundt pan (or any pan), spread the batter evenly in it.
8. Bake 45–55 minutes, until a toothpick inserted comes out clean.
9. Cool the cake completely.
10. Mix the icing sugar and 2 tablespoons of 7UP until smooth, then drizzle over the cooled cake.
