Instructions
- Soak the bulgur in 4 to 5 tablespoons of hot water so it swells.
- While the bulgur swells, blend the onion, tomato, garlic, sweet pepper paste and tomato paste in a food processor with 2 small ice cubes.
- Add the pomegranate molasses, olive oil, salt, black pepper, ketchup, red pepper powder, cumin, sumac, isot pepper and lemon juice to the processor and mix thoroughly. Add the soaked bulgur, peanuts and parsley and pulse until blended. Add more ice cubes if the bulgur needs it. Stop from time to time to push the mixture down so no big pieces remain.
- For the taco, mix the finely chopped onion and parsley with a pinch of salt, some olive oil and a pinch of sumac. Soften the lettuce with a pinch of salt.
- Put about 1 heaping tablespoon of the çiğ köfte mixture into each tortilla bread and spread it out. Top with half a handful of crushed Doritos, lettuce, tomato, 1 to 2 sprigs of parsley, gherkins, the sumac onion, cheese and more Doritos, then serve.
