Ingredients

Instructions

  1. Preheat the oven to 400°F. Line a 3/4-size cookie sheet, or 2 regular cookie sheets, with parchment paper.
  2. In a stand mixer with the whisk attachment, cream the butter, ½ cup powdered sugar and 1 tsp vanilla until smooth.
  3. Switch to the paddle attachment and gradually mix in the flour and ½ tsp salt. Once incorporated, add the almond flour and orange zest and mix until well blended. If the dough is very sticky, add 1–2 tablespoons more flour.
  4. Shape the dough into 1-inch balls, placing them 1 inch apart on the prepared sheet. Bake 11–13 minutes, until the bottoms are golden and the edges are barely golden. Remove from the sheet and cool 5 minutes.
  5. While still warm (not hot), roll the cookies in a bowl of powdered sugar. Transfer to a wire rack to cool completely.
  6. Once cool, roll the cookies in powdered sugar again or dust the tops with powdered sugar through a fine sieve.
