- Garlic · roughly chopped3 cloves
- Salt2 tsp
- Garlic powder1 tsp
- Paprika1 tsp
- Oregano1 tsp
- Dijon mustard1 tsp
- Black pepper · ground
- Potato · halved1 lb
- Carrot · peeled4–5
- Onion1
- Dill · chopped3 tbsp
- Parsley · chopped3 tbsp

Instructions
- Preheat the oven to 450°F. Take the chicken out of the fridge and let it stand at room temperature for 30 minutes.
- Mix the olive oil, lemon juice, garlic, 2 teaspoons salt, garlic powder, paprika, oregano and Dijon in a small bowl. Set aside. Brush half of this mixture generously over the chicken and rub it under the skin.
- Toss the potatoes and vegetables with about 2 tablespoons of the marinade in a large roasting pan, then push them to the edges to leave room for the chicken.
- Place the chicken breast-side down and pat dry. Using strong kitchen shears, cut along both sides of the backbone close to the spine, then remove and discard or save the backbone.
- Flip the chicken breast-side up and press firmly on the breast until you hear the breastbone crack so it lies flat. Alternatively, make two 1-inch cuts on either side of the breastbone near the neck.
- Put the chicken in the pan, brush it all over with the remaining marinade, and rub it under the skin.
- Roast, stirring the vegetables halfway, until a meat thermometer in the thickest part of the breast reads 160°F, about 45 to 50 minutes.
- Rest the chicken for 15 to 20 minutes, then cut it into quarters.
- Arrange the vegetables on a large platter and place the chicken on top or in the middle. Garnish with herbs, feta and lemon zest.
