Ingredients

Instructions

  1. Preheat the oven to 375°F. Use a casserole dish about 9x13 inches.
  2. Wash and dry the apples. Cube the butter for the biscuits and chill it in the freezer.
  3. Peel the apples and cut them into chunks about ½ inch in size. Place them in the casserole dish.
  4. Squeeze a few tablespoons of lemon juice over the apples.
  5. Add the sugar, vanilla, salt, flour, cornstarch, cinnamon and nutmeg. Toss until the apples are well coated and no dry flour remains.
  6. Cut the ¼ cup of butter into tiny pieces and scatter them evenly over the apples.
  7. For the biscuits, combine the flour, sugar, baking soda, baking powder, salt and cinnamon.
  8. Add the cold butter and work it in until crumbly, using a food processor, pastry cutter, or grated cold butter tossed with the flour.
  9. Add the buttermilk and vanilla and stir until the batter is uniform.
  10. Drop large spoonfuls of batter over the apple filling. Sprinkle with sugar crystals if desired.
  11. Bake at 375°F for 40 to 45 minutes. After 20 minutes, cover loosely with foil.
  12. Bake until the apples are tender, the biscuits are golden brown, and the filling bubbles around the edges.
  13. Let the cobbler cool for about 20 minutes before serving.
