Easy Apple Muffins Recipe
Ingredients
- Flour2 ½ cups
- Brown sugar¾ cups
- Sugar¾ cups
- Cinnamon · ground2 tsp
- Butter11 tbsp
- Baking powder1 ¼ tsp
- Salt½ tsp
- Egg2
- Vanilla1 tsp
- Milk¼ cups
- Apple · diced1 ½ cups
Instructions
- Preheat the oven to 400°F. Grease a 12-cup muffin tin or line it with paper cases.
- In a medium bowl, stir the brown sugar, flour, granulated sugar and cinnamon. Stir in the melted butter with a fork until combined but still clumpy. Set aside.
- In a medium bowl, whisk together the flour, baking powder, cinnamon and salt.
- In another bowl, toss the apples with two tablespoons of the flour mixture until well coated.
- In a large bowl, beat the butter and both sugars on medium speed until creamy, about 2 minutes. Beat in the eggs one at a time, scrape down the bowl, then beat in the vanilla.
- On low speed, add a third of the flour mixture, then half the milk. Keep alternating until just combined. Fold in the apples.
- Divide the batter among the muffin cups, about ⅓ cup each. Sprinkle the topping evenly over each muffin, about 2 to 3 tablespoons each.
- Bake for 10 minutes. Reduce the oven to 350°F and bake 12 to 15 more minutes, until a toothpick inserted in the centre comes out with a few moist crumbs.
- Cool 10 minutes in the pan, then move to a wire rack to cool completely.
