- Vanilla2 tsp
- Sugar1 ¾ cups
- Baking powder2 tsp
- Baking soda1 tsp
- Salt½ tsp
- Cinnamon · ground2 ¼ tsp
- Nutmeg · ground½ tsp
- Heavy cream1 tbsp
Instructions
- Preheat the oven to 350°F. Line the muffin tins with paper liners or spray them with baking spray.
- Peel and finely dice the apples, put them in a large bowl, add 2 tablespoons flour and toss until well coated.
- In a large bowl, whisk the eggs, melted butter, sour cream, milk, vanilla and sugar for a few minutes until smooth and the eggs are well beaten.
- In a separate bowl, combine the 3 cups flour, baking soda, baking powder, salt, cinnamon and nutmeg. Sift the dry ingredients into the wet mixture and mix just until smooth and no dry flour remains.
- Fold in the coated apples until evenly distributed.
- For the streusel, put 1/4 cup flour, 1/4 cup sugar and 1/4 teaspoon cinnamon in a small bowl. Grate the frozen butter into the flour in batches, tossing occasionally, until crumbly and dry.
- Pour in the 1 tablespoon cream or milk and gently toss until the flour is no longer dry.
- Fill each muffin tin three-quarters full with batter, then sprinkle streusel over each muffin.
- Bake at 350°F for about 30 minutes, until a toothpick inserted in the centre comes out clean and the muffins are golden brown.
- Move the muffins to a wire rack to cool right away; do not leave them in the pan.
