Ingredients

Instructions

  1. Preheat the oven to 375°F with a rack in the centre. Grease a 12-cup muffin tin. Stir the sugar and cinnamon together.
  2. Halve and core the apples, then slice them very thin (1/16 inch). Cover the slices with water, add the juice of 1 lemon and microwave for 3-4 minutes until soft and flexible but not mushy. Drain and pat dry.
  3. Unfold a thawed puff pastry sheet on a floured surface and roll to 1/8 inch thick, about 14 x 10 inches. Cut into 6 strips about 2 x 10 inches.
  4. Brush the centre of one strip with melted butter and sprinkle with cinnamon sugar. Lay 6-7 apple slices, peel side up and slightly overlapping, along the top half with the edges just above the pastry. Brush apricot preserves over the apples.
  5. Fold the bottom half of the strip up over the apples. Starting at one end, roll it into a rose and place it in the muffin tin. Repeat with the rest.
  6. Brush the roses with the remaining butter and sprinkle with the remaining cinnamon sugar.
  7. Bake at 375°F for 40 minutes, until golden and fully baked. If the apples brown too fast, cover loosely with foil during the last 10 minutes.
  8. Cool 10 minutes in the pan, then move to a wire rack. Dust with powdered sugar if using and serve warm or at room temperature.
