Ingredients

Instructions

  1. Peel the carrots lengthwise into long thin ribbons with a vegetable peeler, working from the wide end toward the narrow end, and put them in a large bowl.
  2. Thinly slice the green onions on a diagonal and add them to the bowl.
  3. Toast the sesame seeds in a dry pan over low heat for 1–2 minutes, stirring constantly, until lightly golden and fragrant. Set aside off the heat.
  4. Whisk the rice vinegar, sesame oil, soy sauce, honey or maple syrup, and grated ginger in a small bowl until smooth and emulsified.
  5. Pour the dressing over the carrots and onions, then toss and gently massage the ribbons with clean hands for 30–45 seconds, until they soften slightly.
  6. Sprinkle the toasted sesame seeds on top and taste, adding salt, soy sauce or vinegar if needed. Serve right away, or chill for 20–30 minutes to let the flavors develop.
