Easy Banana Cake Recipe - Delicious & Simple Baking
Ingredients
- Flour2 cups
- Baking powder1
- Cinnamon · ground½ tsp
- Banana · mashed4–5
- Sugar¾ cups
- Butter · melted4 oz
- Egg2
- Baking soda1 tsp
- Salt¼ tsp
- Greek yoghurt½ cups
- Vanilla1 tsp
- Pecan · ground
- Dried fruit
- Chocolate chip
- Cream cheese
- Chocolate spread
Instructions
- Preheat the oven to 350°F (180°C).
- In one bowl, whisk together the flour, baking powder and cinnamon.
- In a large bowl, mix the mashed bananas, sugar and eggs until combined. Then whisk in the yogurt and melted butter.
- Whisk in the baking soda, vanilla and salt.
- Add the flour mixture in 3 to 4 batches, mixing only until just combined to avoid a dense, dry cake.
- Fold in any chocolate, nuts or dried fruit you are using.
- Spread the batter in a greased 9 x 13-inch baking pan, or a greased 9-inch round springform pan.
- Bake on the center rack for 20 to 25 minutes (45 to 50 minutes in the springform pan), until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- As soon as the cake comes out of the oven, run a knife around the edges to loosen it from the pan. Let it cool to room temperature.
- Dust with confectioner's sugar before serving. For optional cream cheese icing, beat 8 oz softened cream cheese with 4 oz softened butter until fluffy, add 3 cups confectioner's sugar and 2 teaspoons vanilla and beat until smooth, then thin with 2 to 4 tablespoons whole milk to the desired consistency, and spread over the cooled cake.
