Instructions
- Trim the fatty part off the 300 g beef steak. Cut the meat into 3 cm (1¼ inch) square pieces and the fat into small cubes.
- Put the beef and fat in a bag with 1 tbsp Worcestershire sauce, 1 tbsp sake, 1 tbsp mirin, 1 tbsp grated apple, ½ tbsp toasted sesame oil, 1 tsp oyster sauce, 1 tsp grated garlic, 1 bay leaf, ½ tsp grated ginger, ¼ tsp salt and ⅛ tsp ground white pepper. Massage until the meat is evenly coated, then marinate in the fridge for at least 30 minutes.
- Preheat the grill or broiler to medium-high for 5 to 10 minutes.
- Thread the beef onto skewers, alternating meat and fat. Set the skewers on a wire rack over foil, sprinkle with a pinch of sea salt and ground black pepper, and grill for 5 minutes.
- Turn the skewers, season the other side with another pinch of salt and pepper, and grill for 4 minutes more.
- When the meat is cooked through and lightly charred, take the skewers off the grill and rest them for a few minutes.
- Sprinkle with a pinch of shichimi togarashi and a squeeze of lemon juice.
