Easy Blini with Caviar
Ingredients
- Buttermilk1 ½ cups
- Egg3
- Butter2 tbsp
- Flour1 ⅓ cups
- Baking soda1 tsp
- Baking powder1 tsp
- Salt¼ tsp
- Cooking spray
- Black sturgeon caviar2 oz
- Salmon4 oz
- Crème fraîche⅓ cups
- Shallot1
- Caper1 tbsp
- Dill
Instructions
- Pour the buttermilk into a large bowl and add the melted butter and egg. Whisk until the egg is well beaten.
- In another bowl, combine the flour, baking soda, baking powder and salt. Add to the wet ingredients.
- Whisk until smooth and lump-free. The batter should be thick. Use it right away.
- Preheat a griddle or non-stick pan over medium-low heat.
- For each blini, drop 1 tablespoon of batter onto the hot griddle. When bubbles start to rise, flip it. It should be light golden brown.
- Move the hot blini to a wire rack to cool. Do not stack them until they are at room temperature.
- Split the eggs, separate whites from yolks. Very finely dice the whites into a ramekin. Crumble the yolks with a fork into a separate bowl.
- Very finely dice the shallot and finely chop the capers. Put each topping into its own ramekin with a small spoon.
- Put the crème fraîche in a small serving bowl. Add fresh dill to it if you like.
- Serve the caviar on crushed ice, in its tin or in a glass bowl, with mother-of-pearl spoons. Arrange the toppings and blini around it on a platter, or top each blini with crème fraîche, a little of each topping and caviar.
- Serve right away and keep the caviar well chilled.
