Easy Caprese Pasta Salad with Fresh Basil + Mozzarella #shorts
Ingredients
- Extra virgin olive oil½ cups
- Lemon3 tbsp
- Salt1 tsp
- Black pepper · ground½ tsp
- Oregano · dried½ tsp
- Garlic1
- Fusilli8 oz
- Mozzarella cheese8 oz
- Cherry tomato3 cups
- Basil⅓ cups
- Balsamic glaze
Instructions
- Make the dressing: in a measuring cup or mason jar, combine the olive oil, lemon juice, garlic, salt, pepper and oregano. Whisk until emulsified, or cover and shake well in a jar. Set aside so the flavors meld.
- Bring a large pot of water to a boil and salt it moderately, using a little less salt than seawater for a cold salad. Cook the fusilli, stirring now and then, until just al dente. Rinse with cold water to stop the cooking, drain well and toss lightly with olive oil.
- While the pasta cooks, halve the tomatoes. In a large bowl, combine the tomatoes and mozzarella with the cooled pasta.
- Pour the dressing over the salad and toss to coat. If making ahead, keep the salad and dressing separate until serving.
- Let the salad rest 20-30 minutes so the flavors meld. Just before serving, stir in the basil and drizzle lightly with balsamic glaze.
