- Clove · ground¼ tsp
- Salt½ tsp

- Carrot · finely grated3 cups
- Pecan1 cup

Instructions
- Preheat the oven to 350°F (175°C) with a rack in the centre. Butter two 9-inch round pans, line the bases with parchment and lightly butter the parchment.
- In a large bowl, whisk together the flour, both sugars, baking soda, baking powder, spices and salt, breaking up any brown sugar lumps.
- In another bowl, whisk the oil, eggs and applesauce until well combined. Add to the dry ingredients and fold with a spatula until combined.
- Fold in the grated carrots, pecans and raisins (if using) until evenly mixed.
- Divide the batter between the pans and bake for 30 to 35 minutes, until a toothpick inserted in the centre comes out clean.
- Rest the cakes in the pans for 15 to 20 minutes, then move to a wire rack and cool completely before frosting.
- Spread about a quarter of the cream cheese frosting on the first layer. Place the second layer upside down on top and lightly crumb-coat the cake with frosting.
- Spread more frosting over the top and sides. Pipe puffs of frosting around the top edge with a large star tip and scatter the remaining pecans around the edges.
