Easy Cherry Tart

Ingredients

Instructions

  1. In a large bowl, whisk together the flour, salt and sugar. Add the cold cubed butter and rub it in until the mixture resembles breadcrumbs. Add ¼ cup of ice water and start mixing; add more water a little at a time if needed until the dough comes together into a ball. Divide into two balls, wrap each in plastic wrap and refrigerate for 1 hour. Do not overwork the dough, or the crust will be tough.
  2. In a large bowl, mix the pitted cherries, cornstarch, sugar and lemon juice. Set aside.
  3. Once the dough has rested, roll one ball out on a floured surface to fit a greased tart dish or pie plate, and line the base with it.
  4. Fill with the cherry mixture.
  5. Cut the other dough into ½-inch strips and weave them into a lattice on top.
  6. Brush the top with beaten egg and sprinkle with sugar.
  7. Bake at 350°F for 40–45 minutes, or until the crust is golden. If it browns too fast, loosely cover with foil.
  8. Let the tart cool before serving.
