Ingredients

Instructions

  1. Slice the chicken into bite-sized pieces. Mix with the marinade ingredients until evenly coated, then set aside.
  2. Whisk together the sauce ingredients in a small bowl and set aside.
  3. Finely chop the garlic and ginger. Seed and julienne the red chili. Set aside.
  4. Slice the mushrooms and bamboo shoot 1/4 inch thin. Wash the baby bok choy well and cut into halves or quarters.
  5. Trim the green onions, halve lengthwise, then cut into 2-inch pieces. Set aside with the bean sprouts.
  6. Heat a wok over high heat, add 1 Tbs oil and the chicken, and spread it out. Stir-fry until the edges are golden and the chicken is about three-quarters cooked, about 2 to 3 minutes (less than 3 minutes is best). Remove to a plate.
  7. Heat the empty wok over high heat, add 2 Tbs oil and the garlic, ginger and chili, and stir-fry for 30 to 45 seconds until fragrant.
  8. Add the mushrooms, bamboo shoot and bok choy and stir-fry for about 1 minute until softened.
  9. Add the noodles and sauce and stir-fry for 1 to 2 minutes, until the noodles are fully cooked and no sauce runs in the wok.
  10. Return the chicken to the wok with the green onions and bean sprouts. Stir-fry for 30 seconds to 1 minute, until the last three are warmed through.
  11. Transfer to a serving plate, drizzle with sesame oil and sprinkle with sesame seeds.
