- Flour2 ¾ cups
- Baking powder1 tbsp
- Salt1 tsp
- Milk1 ¼ cups
- Sugar1 cup
- Butter½ cups
- Egg2
- Sour cream¼ cups
- Vanilla1 tbsp
- Chocolate chip1 ½ cups
Instructions
- Preheat the oven to 425°F. Line two 12-cup muffin pans with 18 paper liners. Add 2 tablespoons of water to the empty wells in one pan.
- Sift the flour, baking powder and salt into a large bowl, whisk, and set aside.
- In another bowl, whisk together the milk, sugar, melted butter, eggs, sour cream and vanilla until well combined.
- Add the wet mixture to the dry and fold with a spatula until a few streaks of flour remain. Fold in the chocolate chips until evenly distributed and no flour is visible. Keep a handful of chips aside if you like.
- Divide the batter among the liners using an ice cream scoop, about ⅓ cup each. Top with the reserved chips if using.
- Bake one pan at a time for 5 minutes at 425°F.
- Lower the oven to 350°F and bake for 20 minutes, until the tops are golden and a toothpick inserted in the centre comes out clean.
- Cool the muffins a few minutes in the pan, then transfer them to a wire rack to finish cooling.
